SAINT-NECTAIRE : Cow’s milk cheese, Saint-Nectaire is the little gem of Auvergne. Its texture is smooth and creamy and it has a delicate mushroomy and nutty taste. Oh and yes: we DO eat the Saint-Nectaire rind !
